Even within the same season, multi-flower honey can vary greatly from very light to a dark yellow colour. Remember that natural multi-flower honey will never be the same. And why? Simple! Spring multi-flower honey has a light colour and a delicate flavour. In contrast, later harvests of our true honeys differ in aroma, hue and flavour notes. Full-summer honey harvested by bees from the nectar of nearby and available plant types is distinguished by a slightly darker colour and stronger flavour. Summer honeys are a greater intensity of floral fragrance compared to those of spring.
